The meadow scene, up through the morning after, are the scenes I miss most from Edward's POV, those first declarations of true love. I have a soft spot in my heart for when Bella sits on Edward's lap the next day in the rocking chair, and tells him "I love you".
In the meadow, we know that Edward initially ran away because he smells her throat. When Edward returns and sits down, Bella starts to understand that the situation has turned dangerous and experiences fear and a rush of adrenaline, and knows that Edward can sense that.
Edward's display of speed and strength is likely due to his predatory side being triggered, the "monster" inside him that wants Bella's blood. When he is done and comes back and apologizes, I take it as having a double meaning: he is sorry he has frightened her, but he is also sorry for what he is considering doing to her. Thankfully, we know he makes the right decision.
As to exactly "Why" Edward goes into this display instead of remaining in a sitting position, your guess is as good as mine. I would suppose the hunting instinct has its own adrenline-type rush and Edward is compelled to act on it, burning off some of the energy in a non-lethal way.
"It will take an amazing amount of control,” she mused. “More even than Carlisle has. He may be just strong enough…the only thing he’s not strong enough to do is stay away from her. That’s a lost cause.”
